My notes from making scallion buns.
I was surprised to find the tahini in these appropriate, since I’ve had unpleasant experiences with the stuff overall, but it seems like sweetness is the solution.Thanking several food bloggers (recipes 1, 2, 3, 4) for the inspiration for these! See my notes for a more standard legume brownie here (ft. black bean). kitchen notes …
Schupfnudeln recipe from Wir Essen Gesund, though it really is just boiled, mashed potato and flour – my life would have been easier if I had just used the immersion blender for making the potatoes, but the still turned out fine even with the mildly inconsistent texture. They also keep well after being boiled. The …
So this was the first thing a tried to bake in Germany, not counting the dinner rolls I heated up a few times. Didn’t go so well. This apple cake is pretty ugly due to being inverted harshly, as it was cooked in a pot and fell that 15 cm or so onto the lid, …
I’d never seen this green before – called Feldsalat or corn salad or lamb’s lettuce (which is honestly my favorite of the names). I’m the vegan who doesn’t like salads all that much, but hey, I’ll so eat one now and then. When I looked up how to use this green after purchasing it, it …
The taste of unflavored pea protein (from @wholefoods) reminded me of eggs, so I made french toast with it! About one scoop in one cup of milk, with two tablespoons of sugar, an eighth of a teaspoon of kala namak and a pinch of turmeric.
Bread bowls and minestrone soup! I don’t actually have any Sunday dinner traditions, but this is a meal that involves some prep work (homemade bread) and so is best for a weekend. The soup is also something to make on a weekend and eat throughout the week, although last week’s soup is also just fine. …
This is last year’s Thanksgiving meal: spinach, sweet potato casserole, stuffed pumpkin, and homemade cranberry sauce! This pumpkin is stuffed with beans, veggies, and wild rice, but I’m thinking about doing a more traditional stuffing this year, bread stuffing with seitan sausage and maybe some lentils.
I finally made black bean brownies with no sodium beans — cooked them myself. And they turned out great! Gluten free and allergy friendly — recipe adapted from both versions by Ambitious Kitchen (2016, 2012). This was sweet enough for my taste, though a friend didn’t agree, so if you like things in the sweeter …
